I promised to write another blog about the Chocoa Festival 2018 held in the ‘Beurs van Berlage’ in Amsterdam. And I am really excited to, because I want to introduce you to another brand of raw chocolate which became the moment it touched my tongue very special to me.
Listening to the lecture of Sandra Zonneveld who taught us everything about the making of Lovechock, I was also looking on the map we received at the entrance. On the map were all the exhibition stands with theirs brand names and immediately my eyes saw: Brick of Raw Chocolate.
I had to go there. Something drew me to that stand. When I arrived, I saw several very exotic flavors like dried fruit, fresh mint, chilies and liquorice.
Tasting the chocolate pieces, I transformed. I knew Lovechock had met their match! The taste of number 11 is by far my favorite of every piece of chocolate I tasted. Ever. Really. Why?
The taste is strong and soft, it melts in your mouth and the firm texture invites you to bite. It does not crumble or falls apart. There is no bitter sour aftertaste dark chocolate sometimes can have. Of course we are talking about RAW chocolate here! And the secret ingredient might help here as well. This bar is 100% made of cacao: of course the beans, but it is not sweetened with coconut blossom sugar (the rest of the bars are), but number 11 is sweetened with the pulp of the cacao bean itself.
How? The cacao bean is surrounded by a little white layer which taste very sweet. This is used to sweeten and finalize the bar. I think that makes the big difference to all the rest of the raw cacao bars in the world. And, I think that’s the secret ingredient here. The name of this wonder bar? Dark authority.
The making of raw chocolate I explained in my previous blog. Brick of Raw imports the cacaobeans and nibs from Peru and Madagascar and they are further prepared in Holland. During the process of all stages the final temperature does not reach 37 degrees. Due to this process the taste is more intense and more natural and of course for all the good nutrients of cacao keeps contained.
At last, I will tell you something about Brick of Raw Chocolate. There is something very special about this new brand. I told you already about my favorite number 11. There is another pure one (Pure Peru) which was as first discovered. There are several others and some has their own topping. The toppings are based on the 6 Ayurvedic basic tastes*. What a briljant plan! Raw chocolate combined with an Ayurvedic twist. As you did not know: ayur means life vedic means science; literally it means ‘science of life’ and it described as the ancient Indian medicines.
Who invented that? Arend van der Heijden calls himself a foodpioneer. As a cook educated in the world of Ayuredic kitchen he created this new brand by heart. I hope he will supply lots more in eco friendly stores in Amsterdam!
